Why this is the hero
Most curry seafood dim sum is ocean-flavoured filler in a glow-yellow paste. We do the opposite: a Hong Kong–style curry built around real shrimp and real scallop, with the texture and aromatic depth you remember from a Tsim Sha Tsui yum cha cart.
